1. Structural Parameters / Parámetros Estructurales

a. Sweetness / Dulzor

  • Dry / Seco:
    • English: No perceived sugar; up to ~4 g/L residual sugar.
    • Español: Sin azúcar perceptible; hasta aproximadamente 4 g/L de azúcar residual.
  • Off-dry / Semi-seco (Off-dry):
    • English: A tiny amount of detectable sweetness (~5–9 g/L).

  • Medium-dry & Medium-sweet / Semi-dulce:
    • English: Distinct presence of sugar, balanced by acidity (10–45 g/L).

b. Acidity / Acidez

Causes salivation; felt mainly on the sides of the tongue.

  • Low / Baja: Wine feels soft, flat, or flabby. / El vino se siente blando o falto de frescura.
  • Medium / Media: Balanced, natural mouth-watering effect. / Sensación de frescura equilibrada.
  • High / Alta: Crisp, sharp, causing intense salivation. / Sensación punzante que provoca salivación abundante.

c. Tannin / Taninos

Extracted from skins and seeds; causes a drying/astringent sensation on the gums.

  • Low / Bajos: Soft texture, minimal drying. / Textura suave, secado casi imperceptible.
  • Medium / Medios: Noticeable grip on gums. / Sensación de agarre o astringencia moderada.
  • High / Altos: Aggressive, firm drying effect. / Sensación secante y astringente muy intensa en las encías.

d. Alcohol / Alcohol

Felt as a warming or burning sensation in the throat.

  • Low / Bajo: <10.5% abv (e.g., Moscato d’Asti).
  • Medium / Medio: 10.5% – 14.0\%$ abv.
  • High / Alto: >14.0% abv (or $>16.5% for fortified wines).

e. Body / Cuerpo

The overall weight and feel of the wine on the tongue (light, medium, full).

  • Light / Ligero: Feels like water or skimmed milk. / Se siente fluido como el agua o leche desnatada.
  • Medium / Medio: Balanced weight. / Peso intermedio.
  • Full / Con cuerpo (Poderoso): Viscous, rich weight like whole milk or cream. / Denso, pesado y untuoso como la leche entera o crema.

f. Flavour Profile / Perfil de Sabores

1. Flavour Characteristics / Características de los Sabores

  • English: Identifies the specific taste notes perceived while the wine is in the mouth. These often mirror the aromas detected on the nose (primary fruit/floral, secondary oak/lees, tertiary bottle age), but warming in the mouth can release deeper or more subtle notes.
  • Español: Identifica las notas específicas de sabor que se perciben mientras el vino está en la boca. Suelen reflejar los aromas detectados en nariz (fruta/flores primarias, roble/lías secundarias, evolución terciaria), pero el calentamiento del vino en boca puede liberar notas más profundas o sutiles.

2. Flavour Intensity / Intensidad del Sabor

  • English: Measures how pronounced and vibrant the flavours are on the palate.
    • Light: Delicate, subtle flavours that require focus to identify.
    • Medium: Well-defined, easily recognizable flavours.
    • Pronounced: Intense, powerful flavours that fill the mouth effortlessly.
  • Español: Mide qué tan pronunciados y vibrantes son los sabores en el paladar.
    • Ligera (Light): Sabores delicados y sutiles que requieren atención para identificarse.
    • Media (Medium): Sabores bien definidos y fácilmente reconocibles.

3. Nose vs. Palate Differences / Diferencias entre Nariz y Paladar

  • English: It is common for a wine’s flavour profile on the palate to differ slightly from its aroma profile on the nose. For example, a wine may smell intensely sweet due to fruity/vanilla notes but taste bone-dry on the palate.

b. Key Structural Relationships / Relaciones Estructurales Clave

  • Acidity vs. Sweetness / Acidez vs. Dulzor:
    • English: High sweetness needs high acidity to keep the wine fresh and prevent it from tasting cloying (e.g., Sauternes or Riesling).
